You know your ABC’s, right? That’d be
Almond Butter Cookies!
1/3 cup almond butter
1 T. egg substitute
2.5 T. Splenda brown sugar blend
mini chocolate chips
Preheat the oven to 350*
Mix everything but the chocolate chips in a small bowl. Form the dough into 8 balls. Press your thumb into the center of each ball to make a little well. Fill well with chocolate chips and bring the sides up over it so that you get a little chocolate pocket inside. Bake for 10 minutes.
Doesn’t look like much on the outside . . .
These were perfectly dense and moist on the inside with a slight crunch on the outside. Yum yum yum yum yum.

In other news, I need to get my dessert problem under control. I woke up at 3 AM and lay awake for an hour feeling guilty about eating 5 of these before bed . . . and now I am eating another cookie that a student brought me. Is there a twelve step program for cookie addiction???
