I Turned the Corner

I’ve got to admit, the last week has been rough.

I don’t want to get into all the nitty gritty details, but I’ve been pretty bummed out lately.  But today, I finally feel like I got my groove back!  I’m not sure what shifted, but I just feel like I’m on the edge of something big.  Something good.  My hope is back.

Miranda posted this quote a few days ago, and it really spoke to me:

I hope I’m right and this hopeful feeling isn’t completely unfounded.  I’m ready for more. 

At any rate, I made every effort today to yank myself out of my bummed out feelings, and I definitely turned the corner! Open-mouthed smile

After refueling from my race this morning with a lovely bowl of oats (made with coconut milk, which I am officially addicted to!),


I unpacked my Laithwaites Wine shipment, which arrived yesterday via FedEx.  The guy even carried the heavy box up to my apartment!  Winning!


If you’re a wine lover and haven’t heard of Laithwaites, you should definitely check it out!  My introductory case included 15 bottles for only $90–with shipping! Holy great deal!  The best part is, they send you an email before your case ships, so you can pick and choose which wines you want–all red, all white, or a mix.  And if you aren’t ready for your next case yet, you just call them, and they hold it until you are ready.  How nice is that?!?  I have been so happy with all of the wines, too.  I would highly recommend it!  You have to be referred as a club member to sign up, but if you’re interested, just email me!  I’m always happy to spread the wine lovin’ around!

The best part of this club is that if I don’t like any of the wines for any reason, I can exchange it or get a refund, no questions asked!  Every one of the bottles from my last shipment was delicious, but it’s nice to have the option in case I don’t care for something. 

With my wine all safely put away, I took in an afternoon movie.  Yep, Bridesmaids! 


Seriously hysterical.  It was a cute story, but really funny, too!  Sometimes I find going to a movie alone a little depressing, but there was no way I was walking out of this movie down.  It was a the funniest movie I’ve seen in a long long time.  Just what I needed!

A quick trip to the grocery store later, and I was ready for an early dinner.  But before I get to that, I have to share that my grocery bill for this week was $18.  $18!!!!  I had some great store coupons for free lettuce and grape tomatoes, and I cashed them in for almost $10 in savings.  Score!


Inspired once again by Miranda, I whipped up a grown up grilled cheese for dinner with some cheesy zucchini chips on the side.  When I saw her post about grilling her grilled cheese on the actual grill with a salty garlic crust on the outside, I knew I had to recreate! 

In order to avoid chewing my arm off while I cooked, I snacked on a few of my leftover Wine & Cracker Night crackers.  So good!


Grown Up Grilled Cheese

Serves 1

1 ciabatta roll or 2 slices of your favorite bread

1-2 slices of cheese (I used muenster)

1 slice fresh tomato

1 piece of turkey bacon, cooked

cooking spray

garlic salt


You know how to make grilled cheese, right???


Preheat your grill, Griddler, or skillet to medium heat.  Lay the cheese and bacon on one side of your bread and the tomato on the other side.  Don’t forget to salt and pepper your tomato—salt and pepper was made for tomatoes!


I could eat that by itself and be a very happy girl. 

Coat the outside of the bread with cooking spray or brush with olive oil.  Sprinkle garlic salt just on the top of the bread and pop it onto the grill, flipping once the first side is toasty.  I Griddled mine, and it took about 4 minutes total.


Salty, crunchy, gooey goodness.  All my favorite things in one place!


Does it get any better than this?


The answer is no, in case you had any doubt! 


Random reflection: Even though I’ve just eaten, blogging about dinner makes me hungry for more.

  1. Hey lady, I just read your race recap from this morning and first want to say congratulations! You did an amazing job on top of training and having completed a long run on Friday, you are very impressive!
    I am sorry to hear that you were feeling a bit blah lately. I of course don’t know what’s going on to bring you down, but just try to see the positives in whatever the situation is! I know that sounds like an-after-school-special piece of advice but it helps me 🙂
    That sandwich looks great, it would surely make me feel better too!

  2. Yay, you sound like you’ve had a GREAT Sunday!! And yum, to the grilled cheese. I worked at a sandwich shop in college that sold them as Gourmet Grilled Cheese – You could pick 2 cheeses and 2 veggies. Then we grilled on a panini press. 🙂

  3. I am SO glad that you are feeling better. I know how tough it can be to leave your family and friends to move to a new area and build a whole new social network. You’re doing such an amazing job, it’s inspiring to me!

    I LOVE the look of of that grown up grilled cheese! I need to get some melted cheese in my life 🙂 I can’t wait to read about those zucchini chips because they are making my mouth water!

    Usually I like almond milk better than coconut but using it for oatmeal is a great idea 🙂 Congratulations on your great 10K as well and I hope that your week continues on a great note! 🙂

    i LOVED bridesmaids! it was sooo funny! i almost went to the movies last night ‘alone’ to see something borrowed, but i opted not to…..i have never went by myself, but i am trying to do new adventurous things….(lol…not that going to the movies alone is adventurous…..but it’s a baby step!!)

      I went to the movie alone–I’ve gone a few times before and I find that the anticipation of having to go alone is much worse than actually going, if that makes any sort of sense! Once I get there, it’s totally fine! Too bad we don’t live near one another–we could go together! 🙂
