Hi friends!  How’s your week going so far?  Did you know tomorrow is Wednesday already???  And then it will be Thursday, and then . . . the weeeeeeeeekend!!!!! 

{I tell myself these little stories to make it through the week.}

This afternoon, I enjoyed a great cardio and strength workout.  Yep, you heard me.  I enjoyed strength training!  Who would’ve thought? 


I went back and forth between the treadmill and hand weights, and felt like I really got a great workout in!  I’ve decided that I don’t hate arm exercises that much.  As long as there are no push ups involved, I’m good to go!  So here’s the breakdown. 

Cardio/Strength Workout

20 minutes of running @ 6.2

Weight Circuit: 15 bicep curls, 15 triceps extensions, 15 Arnold presses

10 minutes of running @ 6.3

Weight Circuit

10 minutes of running @ 6.4

Weight Circuit

10 minutes of running @ 6.5

5 minute walk @ 4.0

Phew!  The whole thing took me just over an hour, and I really dug this workout!  Lots of variety is the best!  I think not having a training plan telling me what I had to do was a contributing factor, too.  I just did the workout I felt like doing at the pace I felt like doing it.  Love that!

For dinner tonight, I was excited to make an old favorite of mine from college.  My friend, Jamie, and I lived together my senior year, and in our early cooking ventures, we made a Weight Watcher’s recipe for Spicy Black Bean Burgers that we loved.  Ever since, I have been dreaming of making them again.  Tonight was the night to cash in!


Does that look like a summer dinner or what? 

The original recipe makes a ton of burgers, so I went ahead and pared it down Party of One style, ‘cuz that’s how I do. Winking smile  My version still makes 3 burgers, but it’s ok to have leftovers from time to time, right?

Spicy Black Bean Burgers

Makes 3 burgers

1 can black beans, drained and rinsed

1/4 cup finely diced onion

1 tsp. (or 1 small clove) minced garlic

1/2-1 T. minced jalapeno (I used jarred.  Add as much or as little as you like, depending on how spicy you like things)

1 egg white

1/2 cup old-fashioned oats

1/2 tsp. salt

1 T. all purpose flour

1 T. cornmeal

Your favorite burger fixin’s!

Start by mashing the black beans with a potato masher.  You want them to be pretty smooshed, but you can leave some bits of beans in the mix.


Add in the rest of the ingredients except the flour and cornmeal, and mix until thoroughly incorporated. 

Mix the flour and cornmeal together in a shallow plate or bowl.  Form the bean mixture into 3 patties, using a 1/2 cup measuring cup to portion them out—I got exactly 3!  I love it when things work out like that!  Then, coat each burger with the flour and cornmeal mixture. 

Spray a skillet preheated to medium-medium high with non-stick cooking spray and cook the burgers 4-5 minutes per side.  Serve ‘em up with your favorite burger fixin’s!

For me, that means LOTS of ketchup!


On a sandwich thin with a little lettuce and tomato.


The cornmeal gives the burger a nice little crust and the beans give it a great, hearty texture.  So yum!


I had to have a little sweet corn on the side, too, because I like to eat food that gets all over my face. Embarrassed smile


As I was eating my corn, I was actually thinking that it was probably a good thing that I was alone.  Me with a faceful of corn = not cute.  It’s good to find the silver lining in Party of One dining. Smile

Time to rustle up something sweet in the kitchen and watch Jimmy Kimmel!  In case there was any doubt, I am officially hooked on the Bachelorette however much of a trainwreck it may be, and rumor has it Ashley’s on tonight . . . Why do I allow myself to be hooked so easily???  Ah, well.  Can’t resist a good guilty pleasure.

Bethenny Ever After, and before that, Bethenny Getting Married.  This is actually only the second season of The Bachelorette that I’ve watched, but it hooked me last summer and apparently again this season, too!  Several years ago, I really enjoyed the first season of Joe Millionaire on Fox.  Does anyone else remember that?  It was awesomely bad.

  1. I love the bachelorette! I’m watching 16 and pregnant right this moment, but would not say this is one of my favs.

    As for those burgers – they look delish!

    Also, the beginning of your post made me think of the Rebecca Black “Friday” song…hehe 🙂

  2. yey for disqus and for loving strength training! I need to be better about getting mine in but I’ve just been basking in the awesome running weather! 🙂

    I love the look of those burgers, veggie and bean burgers are my favorite meal lately!

    I so miss my reality TV now that we don’t have cable! Nick loves that I’m not watching it because he finds it annoying. sighhhh… 🙂
