It’s Official

Well, it’s official. I’m postponing my marathon in favor of healing up my back and getting 100% healthy. It’s hard to let go, especially since I was really excited and looking forward to the race, but I know it’s the right thing to do.


And the truth is, my back isn’t better. I was able to do the elliptical on Friday without much pain, but I spent Saturday walking around the mall. Oops. By the end of the day, I was in serious pain and spent most of yesterday hurting. Instead of telling my body what I want to hear, I’m going to listen instead. Considering it’s screaming at me to STOP, that’s probably a good decision. Not an easy one, but smart.

So, I’m letting go for now with the knowledge that when I’m healthy again, there will be another marathon.

BUT! Just because I won’t be talking about running for a while doesn’t mean I don’t have other things to say! Get ready for a whole lotta recipes coming your way!

The time I usually spend on a long run on Saturday morning has now become devoted to meal planning for the week. Since I’ve started my nutrition plan, I’m finding that planning things out ahead of time is KEY. Both for my sanity and for my wallet! Do you have any idea how expensive it is to eat snacks all day??? I know it’s because I’m eating healthy, fresh snacks and not packaged ones, though, so that makes it worth it. But I think a little planning will be a huge help.

Here’s this week’s menu:

Monday: Crock Pot Veggie Stew with Cornmeal Dumplings

Tuesday: Thai Turkey Burgers with Roasted Broccoli

Wednesday: Apple Bacon Turkey Panini with Cauliflower Poppers

Thursday: Arugula Salad with Penne, Sun-dried Tomatoes, and Cannelini Beans

I also owe you a recipe! A few weeks back I posted about an awesome French bread pizza I made, but never told you how–which is kind of a crime, because it is SO tasty.

Back in college, I used to come home from the bar, I mean, come home late from studying and eat Stouffer’s French Bread pizzas all the time. Tasty? Yes. Healthy? Who am I kidding? Those things are pretty much the antithesis of healthy. Luckily, I grew out of my late night eating habits and figured out how to healthify my favorites along the way!

Caramelized Chicken & Mushroom French Bread Pizza

Serves one

1 chicken cutlet (or 1 chicken breast pounded thin)

2 T. whole wheat flour

2 tsp. olive oil

1 shallot, minced

1/2 cup sliced mushrooms

splash of white wine (or red, if that’s what you have–just as long as it’s something you’d drink!)


1 piece French bread, split with the insides scooped out

1/4 cup shredded mozzarella or fontina cheese

Italian seasoning

Start by putting the flour in a shallow dish. Season with S&P and coat the chicken cutlet in the flour.

Heat the olive oil in a small skillet over medium heat and add the chicken. Cook about 3 minutes per side, until cooked through, then remove to a plate. Add the shallot and mushrooms to the pan and cook 7-8 minutes, until the mushrooms have softened and the shallots are translucent. Season with S&P. Give it a splash of wine to deglaze the pan. Cook another minute or so until the wine is absorbed.

Slice up the chicken and add it back to the pan, stirring the mixture around a bit. Then, assemble your pizza, dividing the chicken and mushroom mixture evenly between the two sides of your bread. Top each half with 2 T. of cheese. Broil for 3-4 minutes until cheese is melted and bubbly. Top with a sprinkle of Italian seasoning (for fanciness) and eat!


MUCH tastier and healthier than the stuff from the frozen food section!


I love how the bread gets all toasty and crunchy! I love regular pizza, but the crunch thing that a FB pizza has going on is unparalleled. And toppings on this? On point. It’s really hearty and meaty from the mushrooms, but feels a little fancy with the wine flavor in the background.


This is a great last minute dinner, too. You probably have all of the ingredients lying around–and if not, it’s so easy to sub in whatever you do have! I love meals like that. You could use sausage and peppers, bacon and caramelized onions, tomatoes and spinach, pretty much anything!

She’s getting giant! I took her to the vet last week and she was up 7 lbs. from when we went a few weeks ago! Growing like a maniac! πŸ˜€

    Glad you are taking some time off to rest & heal. You won’t regret it, and it will make your first marathon all that much better. Training shouldn’t be (terribly) painful so you definitely made the right decision. Wishing you a speedy recovery Melissa!! πŸ™‚

  3. Wow she is getting bigger!! Still so precious though :). I’m sorry that you had to decide not to race, but I think it’s great that you are doing what sounds like is best for your body! Let yourself heal and then you can kick another race in the a**!

    Just a thought about your back pain, how’s your mattress? I injured my back a few years ago and after weeks and weeks of pain I ended up getting a new good quality mattress and my back was better within days.

    • It’s actually really good! I think it’s just a matter of not resting enough. Unfortunately, I just have to slow way down and let myself heal. Bummer.

  5. This shows your mental toughness. It’s never easy for a motivated athlete to admit that some down time is necessary. It was the right thing to do. You will come back stronger then ever!

  6. Hi girl….I know that must be a really hard decision to make….but your long – term body and health are what’s more important. I hope you can heal soon, I know how much running makes you happy. No matter what happens in Michigan, we will be meeting (hoping running) but at least meeting. I have to just thank you and tell you how happy I am we met (on-line)! Rest. Skype date soon M.

  7. Ohmygoodness, Roo is growing so quickly! They sure do not stay puppy for long!

    Melissa, my dear blogging buddy, I am so sorry that you have to opt out of the marathon, but friend, you are making the right choice here and I applaud you for that. Healing needs to be your number one priority so that you can come back stronger than ever (which I know that you will!) I think almost every runner or athlete has to make this choice at some point. I had to drop out of the Grand Rapids half last fall. Yes, it sucked, but I feel healthier and better than ever after taking October and November as down months. There are plenty of finish lines out there for you to dominate!

    And that pizza! I LOVE me some french bread pizza! Great recipe:-)

  8. Wow, I’m so late to the game. Sorry you had to give up on the race. It’s hard to throw in the towel, and there’s a certain amount of balls you need to possess to do such a thing. However, your body and your sanity will be thanking you, and you’ll be all the more rested up for NYC in the fall!
