Buffalo Chicken Panini

This morning, I had a date with Jillian.

Despite my lack of enthusiasm for the strength training business, it was good to get back to it. Let’s just say, the only thing I was lifting last week in DC was a wine glass, and while it wasn’t all that heavy, I did high reps. Somehow, I don’t think that’s what fitness people mean when they talk about high reps of low weight, but I figured I should stick with what I’m good at, right?

Let’s not talk about how this is a major theme in my life.

Instead, let’s discuss how I was feeling particularly whiny on Twitter yesterday . . .

Makes you want to run right over and follow me, right? My life is so intriguing.

At any rate, I decided to suck it up in the interest of–what? Whining less? Sure.–and whip up a panini because we all know that’s where my true culinary talent lies. I can put delicious fillings in the middle of bread and grill it up like nobody’s business. Not chef-y, but totally delicious.

I got the idea the other day to do a riff on Buffalo Wings and turn them into a panini. Probably the best idea I’ve ever had. At the very least, best idea I had yesterday.

Buffalo Chicken Panini

Serves one

3/4-1 cup shredded, cooked chicken

3-4 T. buffalo sauce (I used Franks)

1 ciabatta roll or piece of ciabatta bread, split with the insides scooped out

For the dressing:

2 T. blue cheese crumbles

2 T. light sour cream (or plain greek yogurt would work)

1 tsp. light mayo

1 tsp. lemon juice (juice from one lemon wedge)

1 tsp. white vinegar

1/8 tsp. garlic salt (+ more garlic powder if you want to up the garlic flavor)

dash of pepper

Directions:

Mash the blue cheese and sour cream together. Stir in all other dressing ingredients to combine.

Pour the buffalo sauce over the chicken and stir to coat.

Mound the chicken onto your scooped out ciabatta roll–I always scoop the inner layer out so the bread gets extra crunchy in the panini press–and pour the dressing over the chicken. Close your sandwich and transfer it onto a hot panini press, sprayed with cooking spray. Press for about 5 minutes, until the bread is crunchy. Let it sit for a few minutes before cutting so it doesn’t completely fall apart on you. Then, cut in half and behold the deliciousness.

That’s better. But still–imagine spicy buffalo wings and cool blue cheese dressing, but layered between that grilled, crunchy bread. YESSSSS.

This is so not fancy, but it is also so SO good. And easy. Semi-homemade, if you will, with the whole blue cheese dressing effort–which, incidentally, is super easy and not at all intimidating. Cough–Paula–cough But if you didn’t want to take 5 minutes to make your own, store bought would work. But I would judge you. OK, not really. Well, maybe. 😉

Since this is fantastically delicious, and I’m not feeling particularly creative this week, I’m thinking there will be a repeat performance soon. Like, tonight. I’m into repeating things lately. Like this song.

    This recipe is great… my brother and sister in law would love something like this- they go crazy for buf-chik anything 🙂

  3. I’m so glad I read your blog right before lunch… cause now I’m going to be thinking about how sad my food is and how I’d like to be eating a panini. Too bad you don’t live closer or maybe you could pack my lunch. (ha, kidding)

    What’s this whole panini press business? I suppose next you expect us to own a cheese grater. 🙂 Actually, that sandwich looks YUM. So…you might have to make that for me.

  5. Sometimes…we just need to be whiny to make ourselves feel better right :)? And when the day comes that we meet (which WILL happen at some point) we totally need to practice high reps with the wine…and you can make me a fantastic panini hehe

  6. Jillian is lovely to wake up to isn’t she? 🙂 I wake up to her every morning. She annoys me sometimes but I love her workouts. And yeah.. still waiting on those abs too. Not holding my breath 🙂 Which DVD are you doing? I’m in week 4 of ripped in 30, and wanting to continue. I’m thinking maybe shred it with weights or 30 day shred. I like a quick work out in the morning or I would do the no more trouble zones. Let me know!

    • I’ve done the Shred, but I’m doing NMTZ right now, and I like it SO much more! You can pick and choose which circuits you do, so if you wanted to shorten it up, you totally could! They’re each right around 5 minutes long.
