I don’t know about you, but March is most definitely not going out like a lamb around here! I think we had better weather at the end of February. So I guess March came in like an angel and is going out like an angry armadillo! Sheesh!

I had a bunch to do tonight, so a quick dinner was in order. Being that it’s cold and crummy outside, soup sounded like the perfect answer! I had an appointment and knew I would be starving when I got home, so I set everything up beforehand. I am so smart sometimes!
Garlic bread . . .
Pre-buttered & garlic salted & placed in the dirtiest toaster oven in existence!
Pan & ingredients . . .
Standing by & ready to become soup!
Butter . . .
Measured out & prepared to melt!
Perishables . . .
Pre-portioned, diced, & grouped to grab from the fridge.
As soon as I walked in the door, I whipped up the perfect Party of One speedy soup.
Tuna Veggie Chowder
Serves 1
1 T. Smart Balance Light
2 T. diced onion
pinch salt
1 T. all-purpose flour
1/8 tsp. ground mustard
Pinch pepper
1/2 cup milk
1/4 cup chicken broth
1/2 cup frozen mixed veggies
pinch ground marjoram
1/4 cup shredded Italian cheese
1/2 can tuna, drained, flaked
- In a small saucepan, melt Smart Balance over medium heat. Add onion; cook and stir until tender ~4 minutes. Reduce heat to low. Stir in flour, mustard and pepper; cook and stir until mixture is smooth and bubbly.
- Gradually whisk in milk and broth and continue whisking until flour mixture has absorbed and no lumps remain. Stir in frozen vegetables and marjoram. Heat to boiling over medium heat, stirring occasionally. Reduce heat to low; cover and simmer 3 to 5 minutes or until vegetables are crisp-tender.
- Add cheese and tuna. Stir gently, until cheese is melted.
Voila!
Creamy chowder, salty garlic toast (with the obligatory bite removed), and a tasty vino to round out the meal!
Served up in my favorite soup-eating mug . . .
to balance out my Spartan attire!
